Serves: 12 muffins
Ingredients
  • ¼ cup coconut oil, melted
  • ¾ cup unsweetened applesauce
  • ½ cup milk
  • ¼ cup maple syrup
  • 2 eggs
  • 1 tsp. vanilla extract
  • ½ cup canned pumpkin
  • 1½ cups oat flour (see notes)
  • ½ cup old fashioned oats
  • ½ tsp. salt
  • ½ tsp. baking soda
  • 2 tsp. pumpkin pie spice
Instructions
  1. Line 12 muffin cups with liners. Preheat oven to 350 degrees.
  2. In a large bowl, combine coconut oil, applesauce, milk, maple syrup, eggs, vanilla extract, and pumpkin.
  3. Add the oat flour, old fashioned oats, salt, baking soda, and pumpkin pie spice. Stir just until combined.
  4. Pour batter into 12 muffin tin cups.
  5. Bake at 350 degrees for 25 minutes.
Notes
To make oat flour: In a food processor, whir 1½ cups old fashioned oats until it forms a fine flour. To ensure that these muffins are gluten-free, purchase gluten-free oats.
