Caesar Salad Dressing (Easy & with NO Raw Eggs!)

- ½ cup mayo
- 1 clove minced garlic
- 1 tsp. anchovy paste
- 1 Tbsp. freshly squeezed lemon juice
- ½ tsp. Dijon mustard
- ¼ tsp. soy sauce
- ¼ cup freshly grated Parmesan
- freshly ground pepper to taste
- Combine all ingredients in a bowl and mix well.
- Chill for several hours (or overnight), then remove from fridge about an hour before tossing salad.
- To serve: gently coat romaine lettuce (torn) with dressing immediately before serving, adding croutons and freshly shaved Parmesan as desired.
