I’m looking for some healthy breakfast bread recipes. I would love to make breakfast muffins or small loaves to keep in the freezer and defrost for breakfasts. I’m looking for healthy recipes that include whole wheat flour and/or oatmeal and that are sweet but not too sweet! I am hoping to make some of these recipes on my next freezer cooking day. Please flood me with bread and muffin recipes to try!
Monte Cristo Sandwiches
These sandwiches make a perfect lunch when you’re tired of “plain ol’ lunch meat.” They are quick and fun to make, and you probably already have all the ingredients on hand! I’m not sure if this recipe is very “authentic,” but it’s my take on the Monte Cristo!Monte Cristo Sandwiches
4 slices whole wheat bread
2 eggs
2 tsp. parmesan cheese
cheese, sliced (cheddar, swiss, colby, & monterey jack are all good)
10 slices lunch meat (your choice; we like turkey!)
Heat (medium) a non-stick skillet on the stove. Mix eggs and parmesan cheese in a shallow bowl. Dip two slices bread into egg mixture (one side only) and place side-by-side (egg side down) in warm skillet. Place slices of cheese on bread and top with lunch meat. Dip the other two slices of bread in the egg mixture (one side only) and top the sandwiches with the bread (egg side up). When bottom slice of bread is golden brown, carefully flip the sandwich so the top can brown as well. Heat until egg is cooked thoroughly, both sides of the sandwiches are golden brown, and cheese is oozing out the side! Slice in half and serve.
Makes 2 sandwiches.

Cheesy Potatoes
My mom has made this recipe countless times, and everyone always enjoys it! I didn’t get a picture of the dish before it was almost gone, but I like to think of that as a testament to how delicious it is!Cheesy Potatoes
1 bag frozen hashbrowns (cubed or shredded… we like shredded)
2 cans cream of chicken soup
4 Tbsp. minced onion
1 small (8 oz.) container sour cream
1/2 stick butter, melted
1/2 bag shredded cheddar cheese
Combine all ingredients in a large bowl and stir thoroughly. Press into a greased baking dish. Bake 30-45 minutes (longer if using a deeper dish) at 350 degrees. Serves 8-10. Like this recipe? Follow me so you never miss a new recipe post!
