Today we are celebrating National Blueberry Pancake Day!
I made this pancake recipe (used 2/3 whole-wheat flour & 1/3 white flour, and sucanat instead of sugar) and added blueberries to the pancakes while they were cooking. In the meantime, I made this homemade blueberry sauce (used sucanat instead of sugar and added lemon zest) to serve over top of the pancakes.
