This is a wonderful cookie recipe that our family has enjoyed for years! I like to keep a batch of dough in the fridge and make a dozen cookies when we want some… since they’re the best when they are warm out of the oven! They also are good once they have cooled since they stay chewy.
Chocolate Chip Cookies
1 stick butter, softened
1/2 cup and 1/3 cup shortening
2 eggs
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 cup sugar
1 cup brown sugar, packed
3 cups all purpose flour
1 1/2 cups chocolate chips
Beat together all ingredients except for flour and chocolate chips. Mixture will be smooth and creamy and very light in color. Then, add the flour and the chocolate chips and mix well. Form into balls. Refrigerate dough balls that you are not baking right away. Bake at 375 degrees for 10 to 12 minutes.Enjoy!

Do you know if it’s possible to buy shortening without soy in it? Otherwise I’ll try them with just butter.
Stacey,
This shortening here is soy-free: http://www.amazon.com/Spectrum-Naturals-Shortening-Vegetable-Containers/dp/B001FA1DG4/ref=pd_bxgy_gro_img_a
