These sandwiches make a perfect lunch when you’re tired of “plain ol’ lunch meat.” They are quick and fun to make, and you probably already have all the ingredients on hand! I’m not sure if this recipe is very “authentic,” but it’s my take on the Monte Cristo!Monte Cristo Sandwiches
4 slices whole wheat bread
2 eggs
2 tsp. parmesan cheese
cheese, sliced (cheddar, swiss, colby, & monterey jack are all good)
10 slices lunch meat (your choice; we like turkey!)
Heat (medium) a non-stick skillet on the stove. Mix eggs and parmesan cheese in a shallow bowl. Dip two slices bread into egg mixture (one side only) and place side-by-side (egg side down) in warm skillet. Place slices of cheese on bread and top with lunch meat. Dip the other two slices of bread in the egg mixture (one side only) and top the sandwiches with the bread (egg side up). When bottom slice of bread is golden brown, carefully flip the sandwich so the top can brown as well. Heat until egg is cooked thoroughly, both sides of the sandwiches are golden brown, and cheese is oozing out the side! Slice in half and serve.
Makes 2 sandwiches.

Mmmm….I love Monte Cristos. Might sound weird, but I like mine w/ strawberry jam! Distracting myself this morning by reading blogs while my puppy dog is in emergency surgery. Please say a little prayer for him (and my nerves) if you think of us! Hope your day is a good one!
