I love how this “Caesar” dressing turned out! I’m using it to dress a tortellini salad for lunch, and I just can’t wait to try it with a salad! This dressing is fantastic, easy to make, and uses simple ingredients you probably have on hand already.
Update: This dressing tasted amazing on our salads we had for lunch! It is so good it makes you want to dance!
Tangy Caesar Dressing
1/2 cup mayonnaise
1/4 cup milk
1/4 cup plus 1/3 cup freshly grated Parmesan cheese, divided
2 Tbsp. lemon juice
2 garlic cloves, minced (I used a garlic press)
In a small bowl or glass measuring cup, mix together mayo, milk, 1/4 cup cheese, lemon juice, and garlic. When making your salad (recommendation: romaine lettuce, croutons, and cherry tomatoes), toss in the additional 1/3 cup of Parmesan cheese before serving.

Oh my, I am going to be using this! I was always a little scared of the raw eggs in a lot of Ceasar recipes, but this one sounds right up my alley. Can’t wait to try it!
