I’m looking for some healthy breakfast bread recipes. I would love to make breakfast muffins or small loaves to keep in the freezer and defrost for breakfasts. I’m looking for healthy recipes that include whole wheat flour and/or oatmeal and that are sweet but not too sweet! I am hoping to make some of these recipes on my next freezer cooking day. Please flood me with bread and muffin recipes to try!

Banana Bran Muffins
1 1/4 cup Whole Wheat Flour
1/2 cup Wheat Bran
1 tsp Baking Powder
1 tsp Baking Soda
1/2 cup Brown Sugar
1 egg
1/4 cup Oil
1/2 cup Buttermilk (or mix a teaspoon or so of vinegar with 1/2 cup milk)
3 or 4 mashed Bananas
Optional: 1/2 cup Chocolate Chips
In a bowl, mix flour, bran, baking soda, and baking powder. In a separate bowl beat egg, sugar, oil. Add mashed bananas and buttermilk to egg mixture. Mix together dry and wet ingredients and stir just until moist. Bake at 375 degrees F for 15-20 minutes or until firm on top. YUMMY!

Not whole grain but EASY and includes that all important beta carotene anti-oxidant! Used to make these and not tell my boys that they had ‘pumpkin’ and they never knew! A box of spice cake mix, small can solid pack pumpkin, 2 egg whites. Mix well, bake in muffin tins till done. Can add nuts and raisins if desired! (This works with chocolate cake mix as well – I am not opposed to chocolate for breakfast – or any other time for that matter! PS – don’t tell Tad about the pumpkin . . love you – mom
