I am using my new crockpot (story here) for the second time this week! Wednesday I made a beef roast made with a cup of coffee, if you can imagine that. I used a recipe from my (VA) church’s secretary, Tammy! (Tammy, if you’re reading this, we loved how the roast turned out!)
Tonight I decided to make crockpot lasagna, which has always been a concept that intrigued me. It’s pretty fast to throw together, since you don’t have to cook the noodles beforehand. I pieced together a few different recipes, but the one I borrowed most heavily from came from A Year of Slow Cooking. I used Tad’s mom’s pasta sauce recipe instead of jarred sauce. (It’s soooo good! I definitely licked the spatula…no lie.)
If all goes well with the lasagna, I’ll post the recipe and pictures later, though I can’t imagine that this will be the prettiest of dishes…haha.

Glad you liked the roast! I got the recipe from the Southern Living Slow-Cooker Cookbook, and tweaked it just a little. It’s one of our favorites, and shows up on our table about once every 2 or 3 months!
